Passion fruit is trained on trellises in the Lam Dong highlands. Mild temperatures year-round let the crop flower in several flushes, so an orchard is picked continuously rather than in one short burst. This is the item we use to hold delivery rhythm between the seasons of other products.
Fruit is picked on skin colour and firmness. For the fresh channel it is taken at moderate maturity to preserve transit time; for processing it is taken riper, to reach better Brix and juice colour.
After harvest, fruit is graded by size and appearance, wrinkled or damaged fruit is removed, and packing is done in a cool environment.
